INTRODUCING WHITE RADDISH SOUP

1 large radish, peeled and cut into chunks (can add more)
5 red dates (optional)
1 tablespoon of wolfberries (optional)
14 cups of water (or base on your pot's size)
Salt to taste
Garnishing:
Some chopped spring onions / coriander
Method:
1. Rub the pork with 2 tablespoons of salt.
2. After 5 minutes, rinse off the salt with water.
3. Fill the soup pot with water and bring it to a boil.
4. Add in the pork and bring it to a boil.
5. Start to skim off the scum and the fat that accumulates on the surface of the soup.
6. Continue the skimming process till you see that the liquid is clear.
7. Add in the stock fish, if you are using. (Can try chicken stock if no fish)
8. Gently simmer for 1½ hours.
9. Add red dates and radish. Bring them to a boil.
10. Lower the heat and simmer for ½ hour.
11. Add in the wolfberries (optional) and season with salt. Simmer for another 20 minutes.
